Vanilla Risotto with Berry Syrup

Vanilla Risotto
Recipe from The Sugar Cube

Berry Syrup
2 Tablespoons butter
2 Tablespoons sugar
1/2 cup blueberries
1 cup sliced strawberries
2 Tablespoons raspberry flavored vodka (optional… I just happened to have some in the pantry)

In a saucepan over medium heat, melt butter. Add sugar and heat until sugar begins to dissolve. Add berries and stir until the berries are cooked down and begin to release their juices, about 10 minutes. Add vodka, if using and continue cooking until the liquid begins to cook off and a thicker syrup begins to form.

Pour syrup over the top of the risotto (pictured above) or mix it in for a berry flavored risotto (below). I preferred having the sauce on top because you would get a bite that is mostly creamy and sweet with hints of the berries’ tartness. I found that mixing it in was too overwhelming. But, you decide!
