Marfa, TX

Mama and I are spending the weekend in Marfa.

We spent the day road tripping through West Texas and after exploring Marfa, were surprised by a music festival happening in town.

We are staying at the fabulous El Cosmico in a small pink trailer aptly named Lil Pinky.

We will spend the weekend exploring, visiting museums, listening to music, and relaxing as much as possible.

So far my culinary experiences have included canned green beans, cold fried catfish, and some nachos. But I’ve also seen the rolling hills and plateaus of West Texas, heard the rolling thunder of a thunderstorm, and met the Mayor of Marfa. So… I think the life experiences outweigh the food.

Spanish Tortilla Omelet

Spanish Tortilla Omelet
makes 1 omelet

In a frying pan heat a few tablespoons safflower oil over medium heat. Slice 2-3 fingerling potatoes into thin rounds. Cook for a few minutes, stirring occasionally, until potatoes are done but still firm. In a small bowl, whisk 2 eggs with a pinch of salt, a dash of pepper, and a splash of milk. Pour into pan with potatoes, swirling to evenly distribute the egg mixture. When eggs are mostly cooked, flip omelet. Sprinkle crumbles of goat cheese on top and fold omelet in half. Transfer to a plate and garnish with goat cheese and chopped fresh rosemary.

Friday… Weekend!

Happy Friday everyone… only a few hours away from the weekend!

I only have a couple hours of work and four hours of cooking standing between me and a weekend with the family and I can’t wait!

I’ve been dying to make a pavlova! This one looks fabulous.

Is it crazy that I’ve never made a homemade margarita? I think I’ll try this recipe.

A few places my fam and I will be eating this weekend: Perla’s, Supper Friends, and (if mom gets her way) HopDoddy… from there, who knows?!
